Audrey is an Associate Professor in Nutrition and Dietetics at the School of Allied Health, University of Limerick and an Adjunct Professor at La Trobe University, Melbourne Australia.
Audrey’s primary research interest and expertise is researching the effects of improved diet quality in diseases with an inflammatory pathogenesis and has conducted several dietary intervention studies to test the effects of a Mediterranean Diet on outcome measures associated with disease progression. Whilst the Mediterranean diet becomes the most evidence based diet for improved health and longevity and cited as one of the most sustainable diets in the world, Audrey’s research has moved into the evidence practice gap around the enablers and barriers to uptake and adherence to the Mediterranean Diet in non-Mediterranean Diet populations and utilises implementation science methods to understand this more.
